Paleo Banana Pancakes

Ingredients
- 2 eggs
- 1 banana
- 1 teaspoon vanilla
- 1/4 teaspoon cinnamon
- 1/8 heaping teaspoon baking powder
- Optional: small handful of walnuts
Instructions
Preheat oven to 400 degrees
Line glass pie plate with parchment paper. This makes one big pancake. If want smaller pancakes you could use a flat baking sheet with parchment paper and pour smaller circles of batter.
Put all ingredients into the cup for an immersion blender and blend.
Pour batter into lined pie plate.
Cook for 20 minutes. Pancake should be light golden brown on top.
Thoughts & Tips
This is my favorite breakfast. My body doesn't process grains well, so this is a recipe that feels special and I use regularly.
If you're paying attention to FODMAPs, just use a banana before it goes ripe (minimal brown spots). This will still work is a slight green banana.
I usually put a slice of butter on top. If I am feeling extra special, I'll put maple syrup on as well. Though is it sweet enough just as it is for my palate.
